Update on Monday, December 29th: Ubisoft started to bring the servers back online slowly late in the day on December 28th. Based on several updates made to their social channels, it appears as though the rollback is complete and Rainbow Six Siege is again available "to all players."
An issue with long queue times has also just now been resolved. From the sounds of things, it sure seems like Rainbow Six Siege is now fully operational once again except for the in-game storefront. Ubisoft says that "the Marketplace will remain closed until further notice as investigations continue."
Ubisoft also shared word on the exact timing of the server rollback:
Players who did not log in between December 27th 10:49 UTC and December 29th should see no changes to their inventory.

Rainbow Six Siege (or rather, Rainbow Six Siege X) servers have been offline now for a couple of days and Ubisoft says that they have no idea exactly when they will be restored. This is the latest word from the developer that has been working to rollback Rainbow Six Siege game servers following a massive hack.
The servers and in-game marketplace were taken offline on Saturday, December 27th after hackers gained access to major components of the game's systems. The hackers were allegedly able to ban and unban players, send custom messages to the in-game ban notification, unlock all in-game items for players (including developer only cosmetics), and grant every player massive amounts of in-game currency.
Many players reported receiving 2 billion in Rainbow Six Credits and Renown. Credits being the name for the currency that can be purchased for real world money, with the most expensive option being 15,000 Credits for $99.99. In other words, 2 billion Credits is about $13.33 million.
While Ubisoft says that no players will be punished for spending any of the currency they were given by the hackers, any transactions made after 11 AM UTC (6 AM ET) on Saturday will be rolled back. Presumably that is the time for the snapshot of the latest server backup available to Ubisoft.
At around 12 PM (ET) on Sunday, Ubisoft issued an update on the status of the rollback. In this new statement, they do not provide any estimated time on when online functionality will be restored. Their statement says that they are conducting "extensive quality control tests(...) to ensure the integrity of accounts and effectiveness of changes." Their full remarks can be found below.
