Yes all correct, the ailerons (spelling?) are on the back side of the wings these control the pitch of the plane.
The higher the number or the greater the sensitivity that you have in the controls the faster these will react. So if you have them all on one, then you will have a very sluggish plane the will both not react quickly or be able to have as tighter turning circle. But If you have them all up high or highish (depending on where you feel comfortable) you will find that you have to move the mouse alot less to get the same results. The agility of the plane/heli is increased as it will react faster and be able to turn further then before.
