I'm seeing valid points on both sides of the argument, but a lot of it boils down to some nice ideas on paper, but poor execution at release. Here are my two cents.
1. Vehicles can be defeated. You just need the right gear and timing. Even a team of medics can take out a tank provided they have enough grenades and ample cover.
2. Ground vehicles can be taken out by anything. Helos can be taken out by anything. Jets, however, are usually only defeated by other jets (or a sneaky pack of C4). Until the AA is fixed, like the PRMM did, jets will reign supreme over the skies. All that you have to do on a jet-equipped server is to merely stay clear of ground vehicles, out of helos, and away from flags...
3. Each vehicle serves a role. Using it for other roles, though sometimes beneficial, is mostly asking for a quick visit back to the respawn screen. Jeeps are meant for quick transport, maybe even to scare off helos. APCs are better at securing a site from a block away. Tanks knock on the door, kick it down, and steal your beer. Boats are merely a louder way to swim fast. Jets are for air superiority. Attack helos are for ground cover. Heavy helos (gasp!) are for troop transport. Bombers are for... well, bombing. And AA vehicles are usually only effective against helos.
4. Use the turrets to your advantage. TOW missiles and AA can be quite effective when used properly. Wait a minute. Did I just say AA can be effective? Scratch that. Anyhow, at least you can use it to finish off an APC or tank, provided it's weakened already.
5. Be a little more patient when moving. I can't recall how many times I've seen a tank rolling in and then went to hide before he could get a glimpse of me. That can mean the difference between being an easy kill or making him an easy kill. There is no shame in hiding from vehicles. Even if you're an AT guy, it may be better to let the tank roll by before opening up on him. Once he gets hit, he still has to find you. By the time he figures out where you're hiding, you can get off another shot, perhaps buying teammates time to flank him.
6. Being sneaky pays off in this game. Let the enemy think there is no one around. Visit their main base and toss a C4 into the heavy helo cockpit. They won't see it when they get in, and you can be damn sure that you'll get a couple quick kills once you let them fly far enough away. It's even funnier when you kill them right before they get to the flag. All that travel, down the toilet. :) Also, engineers can take advantage of the terrain. Did you know that the landmines are best used when thrown in front of an unused tank or on the level part of an incline? The driver usually can't see the former and is too late to respond to the latter.
7. It is possible to play a whole round without setting foot in a vehicle. Sure, you'll travel slower, but at least you can make use of cover. Pathways like buildings and alleyways are more convenient for footsoldiers, especially if you can take paths that the enemy won't see your approach. Even if a guy camps a flag with a tank, he is only limiting his vision and prolonging the inevitable: an artillery strike, an explosives plant, or an airstrike.
8. If you are simply not having fun with the game due to vehicles, either play a map with little to no vehicles, or go play something else.
