The easiest answer by far is... GO CHANGE YOUR SETTINGS!!! =) I couldn't fly until I changed the sensitivity of the controls. I fly at around .75 with a yaw and pitch factor of 5. Experiment with different controls. Make a single player game, get in the bird, and then press escape to go to the lobby. Go to controls, and click the helicopter settings. Then after your done, hit escape again. Keep adjusting until you get it right?
Now, my question is... Do you use the mouse to fly or your Arrow keys? I like the mouse much better. You still have to use A,S,D and W for your lateral and Rev movement... but it all works out for me =).

I pretty much figured how to fly the helicopter well after flying in them for a while. Once you move a helicopter, all you're doing is countering the movements; I do this on the keyboard using the WASD and arrow keys simultaneously. So now I've mastered the flying, it makes weaving through objects close to the ground easy and targeting easier.

One thing I can't get down yet is flying slowly sideways (flying out and from cover). Everytime I try it, I'll find myself trying to counter the altitude lost and either a forward or backward movements, thus it turns out to be anything but sideways flying.
