There are a lot of neat little "tricks" to the soldiers. Things I have noticed:

Patches and helmets/masks depending on the primary gun chosen
Added equipment depending on perks selected
The animations all the soldiers do when switching weapons

I would say the soldiers have a lot of things like that and we just never notice much as we are under fire at the time.
