Here's a stupid question...if you edit the files for the UFO, instead of waiting half an hour, couldn't you edit it to be, oh, a minute or so? Save some time?

Well, there are MD5 checksums for each of the archives holding all the level data/information, so you can't just edit the text files with this information in them. BF2 just crashes (how nice and informative, EA/Dice) when it doesn't match (at least, as far as I've experienced).

You would have to use the BF2 editor and essentially make a duplicate copy of the level, but with your modifications.

If you have the BF2 editor
Just change the files and them relance the map is the UFO times changed and maybe fix it , so that's it not in the damage zone and can get to it earlyer

There is a katana on the 32 player version of Dnipro Sunrise I'm pretty sure. When I was browsing through the level's files I saw that the katana was there. Unfortunately I do not know the exact location right now (I'd have to go back to looking through all that text, then read the coordinates and guesstimate whereabouts those coordinates are in relation to the center of the map, etc.).
