Raid 0 - you see both disks as one , if one fails you lose all data , but you get max performance
Raid 1 - you lose Half you disk space , and is slower than a single disk , however if a disk fails you lose nothing
Raid 5 - (minimum 3 disks ) you get some performance and you can lose one disk without data loss.

The best solution would be a RAID0+1 setup, this way you'll get the benefit of the speed in RAID0, but also the "backup" capabilities in RAID1. Only problem is that you need 3 disks for that.

Personally I run 2 Raptors in RAID0, and the performance is awesome :)
Just take a weekly backup, and you wont stand there helpless in case one of them crashes.

I have a couple of 36g raptors in raid 0 and an older IDE 120GB barracuda for backups and stuff.
