ooh toughy since there are 69xx series ATi cards coming start of next year I think.

But so far Ive not been able to find a single game where I need a 2nd 5870, 1 has been able to handle all so far.

Worth waiting for or would the 2 5870's be sufficient enough to outlast other cards and games for a while?
Also I haven't check but will I need to buy CPU gel (thermal?) and a crossfire bridge?
Also I won't buy a new build for another 2-3 years after this one so it needs to be worth it!

The 6xxx series have much improved crossfire performance, so I think it is worth waiting since you are building a crossfire rig. Reviews are supposed to be out around the 13th December
And you will need thermal paste and a crossfire bridge, but it may be pre-applied to your cooler and included with the cards. You will have to research the specific products.

Most new games are ports from consoles with hardware inferior to a good PC, so highend GFX cards can be usable for quite some time. But no guarantees.

Would It be stubborn not to wait? The only concern I have is the pricing difference when the 69xx come out.

A couple of 5870 are a lot of power, I don't think you will find them insufficient for a long time. I am still very satisfied with the performance of my two 4850.
A pricedrop is guaranteed as soon as you leave the store with any new technology, that's just the way it is.
