The problem is, with Saitek sticks especially, there is a rather large un-changeable dead zone. It may be helpful in the problem that Neptune mentioned but it is a pain in the back-side when it comes to tight formations and aerobatic displays.

Every joystick is seemingly uncalibrated (my saitek as well), and you need to do is make some deadzone changes, voila, problem solved.
