It could be like one of those old toys were the airplane was attached to a string and you just spun around with it.

Tried it - can't do it. Won't let you shoot the bow and arrow when you're on the side or the rear of a transport copter. Also remember you're in a position where you can't freely exit.

I wouldn't wonder if someone managed to mod it so the grapling hook could be stuck on vehicle, because if you haven't noticed, it's possible to hang off it while it's swaying (directly after being thrown).
