Need a gameplay guide

I'm new to BF2 and I'm looking for a good guide to playing online - any suggestions

I need help with things like switching seats, why I can't kill with a couple off shots but I get killed by one, etc

just play, and look at the controls in the options area to figure out what does what, then read your manual that came with the game.

The manual is pretty sh*t but your best gameguide is this website and forum. Iwuold especially read through the tips and tricks section. that will help you out a lot

How do you pick up a medical kit to heal yourself?
How do you switch seats?
Why do I get killed in 1 or 2 shots but it takes me more to kill others?

1 drop it in front of you and run to it
2. f1 f2 f3 f4 f5 for different seats
3. aiming is a true artform aim for heads for quicker deaths.

Sorry to be dumb but how do you pick it up/drop it?

If your playing as a medic switch to the pack (default key is 5 i think) and click mouse button 1 to drop it onto the ground. To use them you just walk over them when your low on health and it will automatically heal you.

some kits in the game come with body armour, medic and eng don't, so it might seem to take more hits to kill them, like was already said practise and try aim for head.
