I've done this a few times, and the only real threats are tanks and other planes.
You can see the AT missiles coming from far away, slide a bit to the right/left, and go up or down a bit, and you'll evade them everytime.
Similar for jeeps, and then just take them out with the cannon.
Against AA, just drop flares, and it'll always miss

Those bridges in wake are pretty fun, I'm not saying it works every time, but I've made the enemy crash atleast 5 times flying under the bridges, it's not that tough to do upside down.
