When i fly i have the sensitivity at 10, it gives me te most reaction with the mouse. The yaw/pitch factor just make the plane more sensative in those directions. I have both of these at 5.

yaw is the turn around your axis (roll); e.g. if you want to fly tight/fast curves etc.
pitch is the up (pitch back) and down (pitch forward) movement of your aircraft; e.g. while performing a looping.
For mouse and keyboard controls I would suggest pitch and yaw on 10, sensitivity on something around 4.60. You gonna need to perform a lot of fast movements but still need to be precise. Especially while dogfighting.
Furthermore I recommend you to set "pitch back" on any keyboard key as you'll need that a lot for evasive maneuvers etc.
When you're serious about flying go for a Joystick. You'll have a lot more and precise controll over your aircraft than with mouse/keyboard combo.
