I see both sides to this as I am still moving up the ranks in the jet pilot category, but I consider myself to be a good veteran chopper pilot.
Nothing ****es me off more than letting someone else take the chopper - only to see it get wasted by them crashing shortly after take-off into a hill that magically jumped in front of them - or them just using it to get to some uber sniper spot. If you want to hitch a ride - hitch a ride, don't steal and waste it when it can be put to use.
As for jet flying - I think I am decent enough to play online - and will when I see planes not in use, and do fairly well. If I see other people wanting to use it when I get shot down - I let them have a go and see if they are any better than I am - if they are, I move on. If they stink it up - then usually will snag it back and keep flying.
When I am on a roll with the chopper, and I have a good gunner - and we are topping the charts, and doing very well at keeping the enemy at bay - why should my gunner and I back off the chopper to let some other hack go crash it? I am more than willing to let people have a shot at it - but if you do worse than I do at it - time for you to move on and do something else that will actually benefit our team.
By you trashing our resources, you are not benefiting the team, and in fact you lose tickets for us each time you die.
I know this does sound selfish and does not allow for room to improve on multiplayer, but you just need to pick the right times to do it. Pick a server that is not as crowded, or that does have as many pilots. I have been on servers that have had a couple crews of people stacked for the chopper - and it is just a waste to sit there and wait for it. I would rather move on to another mode of play on that server, or if it is still early on - go jump on a new server.
