I'm pretty sure there is a weak spot somewhere, I just have no idea where it is. I've seen fully repaired APCs and tanks blow up after being hit by only 1 anti-tank missile. Or maybe it's just a bug, or it's random, I have no clue.

One thing I noticed. The first (SRAW) shot can take only a fraction of an armored vehicles health. Something like 1/10th or less. But the second shot can destroy it. Maybe this is why people think there are 1 shot sweet spots.

Haha, I love how you failed to specify which weapon. So the answer I give to you, is anywhere. TV Guided missiles will 1-hit any tank or APC, =)

one thing that i can bet is that if he had done a search on this it would have given him a thread made by someone a while back that shows all damage done and where to hit everything.
