The weak spot is somewhere around the wheels. I've never killed apc with one shot but with two. I know a TOW will take out a apc with one shot to the wheels though.
As an AT player, I have one hit many APCs. The secret is the underbelly. On certain maps, I wait for them to go over hills and expose its underside and WHAM :) No more APC.
Plus I'm safe because the main weapon can't arc down in my direction.

Yes you're right. Another thing in the AT favour is the fact that the APCs are so underpowered they'll often stall or slow on a hill and the time to hit them is when they just start to go over a rise.
I've had my rockets fly right through the APC and out the other side when I aim at the wheels.
could also be the crapy netcode of BF2 , the AT weapon is a one shot reload weapon, and sometimes the server just won't register your shot.
Had it a few times now, you shoot an APC or tank and the misile just fly right true it, not under or above but just flying straight in and straight out.
Same with snipers, you shoot a guy who sits still , aiming perfectly, no hit and you don't see your bullet dropping somewhere.
With other weapons it doesn't realy mather becauee you shoot bursts
