So you'll find them in:
Steam\SteamApps\condition zero deleted scenes models.gcf
You'll need GCFScape to browse through that file. Just extract the files you need, and nearly everything should work fine as-is. I think a few p_ models will fail to validate, and a few v_ models might be in the opposite hand (the knife in particular), but that's about the extent of it.
I haven't messed with the player models, but the basic player ones should be the same concept. -
