Most of the people on this forum are PC users, so you may not get many responses from other Console folks.
For PC though, many recommend the following for the headshot challenges:
a) find a server running "Shipment" 24/7
b) enable Steady Aim
c) aim high
Shipment works well because it is so small. Yes, you die a lot (usually), but there are targets everywhere to shoot. You can often get a higher number of headshots faster on Shipment. I'm not sure if you have the ability to run a single map over and over again on Xbox360, but if you do, find one running Shipment. Or start one up yourself and have people join.
Aiming high (upper chest/neck/head) is fairly obvious, as the recoil will raise your weapon, increasing the chances of the killing shot being in the head.
Steady Aim reduces your crosshair size so you have better accuracy from the hip (ie. no ironsights). Some claim that this perk may actually help in getting headshots, even more than careful ironsight shots to the head - if true, it may be a small glitch in the code, or just from the increased accuracy of the crosshairs. -
