From what I can tell, there are only a couple hundred ranked SF servers out there - wouldn't take you too long to check them out and see for yourself.
Personally, I don't know of any that run those two maps exclusively, but there are several that run full map rotations and not just Warlord or Ghost Town.
Looking for a good server to play on, I hadn't played SF in several months and me and a few clan mates decided to play some ghost town. After the round ended, the admins decided to kick all three of us, I'm assuming because we beat their team and we had constant vote kicks against us the entire round. Glad to see there are still immature admins, but that's besides the point. What are some good servers you guys play on?
Try Addicted-2-Games Ghost Town (I/O and vehicle versions) and Warlord servers.
Also, although they are usually empty, =SF= (sovereign forces clan) has two great servers, one running Surge/Mass Destruction/Warlord, the other one running the 3 night maps. =SF= also has a great Ghost town server.

My experience is that the SF servers are pretty much full all of the time.
i've tried, its really hard to get it started people come then leave and your like NOOOOOOOOOOO stay!
then when it does start the rounds are pathetic at the beggining!
