Making copies of the discs

I was thinking about making copies of all three discs just incase anything happened to the original ones. Would I be able to use the original CD-key with the new discs? And would there be any other problems?

yea u can use the cd key with any discs, but u mite have problems when trying to play with the burned disks. usually game cds have burn protections like they would seomtiems put an error on the cd on purpose and then the burner will try tofix it, which then makes the cd unuseable. but in my experience, its easier to make a cd image

Copy the disks onto your hard drives. Right click->explore-> whatever. Copy all the files onto your HDD in the folder of your choice. Voila. Then you can make an image, but it installs much faster from the HDD than the CD. Even EA says that this is an acceptable way to install from.
