Well... yeah.. he picked up an enemies AK and then edited it so that the movie only shows AK footage... what is so confusing about that?

Nah, it happens a couple times. Also, you can see him using the AK-101 vs MEC players.

Like troybob said it's possible to switch between kits by pressing the G key while standing over them. It doesn't matter which army the kit belongs to.

He just easily picked up someone else's kit like mentioned before with the "G" key, very easy and handy.

Well any weapon is just as accurate without iron sights it's just that you don't get the zoom. I like it better without iron sights.

This video was made long before all of the changes of the 1.2 patch were implemented. Not only did the TV missiles have a longer range, but it was still possible to jump and shoot simutaneously as shown in the video.
