how much damage does a weapon need for 1 head shot to kill them? also does a class haveing armor come into play?

I think anything exept a pistol will kill with one shot to the head, pistol needs 2 i found.

Anything above 35 in damage will normally give a kill with one shot.

head shots are funny ex. when your hiding and you got a sniper, and your killing loads of people, but they dont know where you are

Or when you're running througha squad with a G36 or an F2000, run out of ammo, swtich to pistol only to run into a PKM whore... and pwn him straight up after giving him a bullet to each eye.
