I would have to say since you will be starting fresh your best bet is to go with Vista Ultimate 64 bit Edition - Retail. As XP Pro will stop getting updates later on down the road and when that happens your just asking for trouble.
Some games and applications will not work on Vista, but the developer is more then likely create a patch or update for it to be compatible with Vista unless the software is no longer in development/supported. Which in that case it shouldn't be used anymore, as non-active develop is always bad for the end user as there will be no one to keep it secure, optimized and updated.
